Title: The Story of Chocolate: Nutrition and Sensory Qualities

Description: This talk will include the history of chocolate, a food native to Central and South America, potential health benefits of chocolate, and sensory attributes of chocolate. Rebecca Ankenbrand will discuss how chocolate is processed from bean to bar.

Marilynn Schnepf Marilynn Schnepf is a Professor Emeritus in the Department of Nutrition and Health Sciences. She served as Department Chair for 20 years and Director of Hospitality, Restaurant and Tourism Management for 4 years at UNL. She has a Ph.D. in Food Science and Technology and a M.S. in Nutrition as well as History from UNL. She has presented the talk “The Story of Chocolate" to many groups in Lincoln for the past 15 years. Joining her this year will be Rebecca Ankenbrand, founder of Minou Chocolates, a local Lincoln company.
